Pheasant Under Broken Glass
Life is never dull in the country.This is a story of me,Sweet Annie and a pheasant. There are three windows over my kitchen sink and as I was walking through the kitchen with my Newfoundland dog, Sweet Annie, I heard a tremendous explosion and glass breaking. I ducked because I thought that someone had taken a shot at me. Sweet Annie ran under the table.
When I recovered from my fright, I looked and found that only the outside pane of glass in my double glazed window was shattered. I tried to look out the window to see if there was anyone out there with a gun...Nothing to be seen. I looked at the window again to see if there was a bullet hole...again, nothing. Finally I went outside to see what had hit the window and the evidence was there on the ground. A beautiful cock pheasant who I have enjoyed watching dine on sunflower seed and cracked corn for the past few weeks had obviously been startled. He had flown straight into the glass, smashed the window and broken his neck.
I picked him up and set him down in the basement. Later in the day,one of my sons, who was visiting, cleaned the bird. I cooked him up and the next day for dinner we had "pheasant under broken glass."As the proverbial saying goes: Never fly into a window and break your neck for you will wind up as dinner.
Here is the recipe I created:
Pheasant Under Broken Glass
Heat Oven to 350 degrees1 skinned pheasant, whole or cut up1 jar currant jellyPlace pheasant or parts into cooking bag.Pour currant jelly into bag with pheasant. Seal bag and pierce according to cooking bag directions.Place in small roasting pan. Roast for 1 hour or until internal temperature reaches 180 degrees. Enjoy!
