Coffee Cake
When I first moved to the country a dear friend who also lived in the country gave me this recipe. She said “No one who lives in the country should be without this recipe” All the ingredients are always on hand and it can quickly be made to serve someone who just “drops in.” As you can see, I wrote it in the front of my Betty Crocker cookbook. I don’t know where she got the recipe or who Mrs. Kennedy was but I have had it since 1955.
Mrs. Kennedy's Crumb Cake
an easy coffee cake
Pre-heat oven to 350 degrees F.Serves 8 easily. 1. - 2 C flour
- 2 C brown sugar
- 1/2 C butter
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda

Mix 1. like pie crust with pastry cutter until well mixed and butter is the size of peas.Take out a scant cup and set aside. Add 2. to 1. and mix well. Turn into a greased 9 x 13 pan. Sprinkle the extra cup of 1. over the top. Bake for 20 - 30 minutes or until a toothpick comes out clean. Do not overbake.
This is the best coffee cake recipe. The ingredients for part 1. can be mixed up in advance and kept on hand in the refrigerator.The recipe is flexible. Lacking buttermilk, I have made it with a combination of yogurt and milk, or just milk with a teaspoon of lemon juice to curdle it. My youngest daughter assures me that it still works if you use half brown sugar and half white sugar. Try it for yourself. It is a coffee cake that almost everyone enjoys. Works well as a dessert too!
