Cucumber Salad Recipes


Hot summer weather is just perfect for cucumber salad recipes. The cucumbers grow well in the heat and they make a cooling summer salad.

Creamed Cucumbers have been on my family menu ever since I started cooking.I don’t know where the recipe I use came from and when I first used it. I never definitely measured anything……I just added the ingredients by how they looked.

And they always seemed to turn out just right.

Sliced Cucumbers and Onions in Bowl Our family members have always loved to eat and everyone has special recipes.One year the family decided to create a “family cookbook” and I was told that I had to include the recipe for Creamed Cucumbers.

This was a real challenge for me because I had never used a recipe. It took me about four weeks of experimenting and quite a few cucumbers to come up with a definitive recipe for “Creamed Cucumbers” that tasted like everyone remembered them tasting.

Here is the recipe:

Creamed Cucumbers

  • 3-4 English Cucumbers (regular cucumbers will work too-just peel them)
  • 1 big onion (or 2 small onions)
  • Slice the onions and the cucumbers very thin on a vegetable slicer.(I have an old Feemster`s vegetable slicer that I have had for years,and it is still my choice for slicing paper thin.)

    Put the sliced vegetables in a large bowl.

    Slicing Cucumbers and Onions Mix up the sauce:

  • 1 cup mayonnaise (or use 1/2 cup mayo and 1/2 cup yogurt)
  • 1/3 cup sugar
  • 1 tsp salt
  • 1/3 cup vinegar
  • Stir thoroughly and pour over the sliced vegetables. Gently stir to coat and refrigerate for an hour or so to let the flavors develop.

    Serve on a bed of lettuce.



    In extreme summer heat, cucumber salad recipes can be made with gelatin.One of my vegetable customers offered this one adapted from Better Homes and Garden. In a recent heat wave, I found it extremely cooling!

    Cucumber Salad

    Serves 8

  • 1/2 cup cold water
  • 2 Envelopes plain gelatin
  • 1 Cup water
  • 1/2 cup white vinegar
  • 3 cups peeled & seeded cucumber cut into 1/4 inch pieces
  • 1/2 cup sliced green onions
  • 1 cup sugar
  • 1 tsp. salt
  • 1/2 cup celery cut into 1/4 inch pieces
  • Pour the cold water into a bowl. Sprinkle gelatin over water and letsoften 10 minutes.

    Combine 1 cup water,vinegar,sugar and salt in saucepan. Cook over mediumheat until hot and sugar is dissolved. Remove from heat.

    Add gelatin and stir until dissolved. Transfer to a large bowlwhen gelatin begins to thicken.

    Stir in cucumbers,onions and celery. Pour into a 6-8 cup mold thathas been lightly oiled.

    Refrigerate 4 hours.
