Homemade Dinner Rolls
A versatile homemade dinner rolls recipe is handy to have when you live in the country. I keep these rolls on hand in the freezer-ready to warm up when last minute guests drop in for dinner.
Sixty Minute Rolls
Pre-heat oven to 425 degrees F.Yield: 2 dozen rolls - 1 C. milk
- 1/2 C. water
- 1/4 C butter
- 3 1/2to4 1/2 C all purpose flour
- 3 T. granulated sugar
- 1 tsp. Salt
- 2 scant T. instant dry yeast or 2 pkg. active dry yeast
Combine milk,water and butter in microwave safe bowl. Heat until liquids are very warm (120 to 130 degrees F.) Butter does not need to melt.Place 1 1/2 C flour,sugar,salt and yeast in mixing bowl. Stir to mix. Gradually add liquids to dry ingredients and beat 2 minutes with electric mixer on medium speed, scraping bowl occasionally. Add 1/2 C. flour. Beat at high speed 2 minutes,scraping bowl occasionally. Stir in enough additional flour to make a soft dough. Turn out onto a lightly floured surface and knead until smooth and elastic - about 5 minutes. Place in greased bowl,turning to grease top. Cover. Place in warm place away from drafts. Let rise 15 minutes. Divide into 4 pieces and shape. I like to pat each ball of dough into a circle and cut into 6 pie shapes. Roll up - starting from the wide end. Place each roll on baking sheet and curve slightly into crescent shape. Cover lightly with clean dish towel. Let rise in warm place about 15 minutes. Bake at 425 degrees F. for 12 minutes or until done.
Sixty Minute Rolls freeze well. The recipe can be doubled or even tripled without a problem.My eldest daughter likes to make tiny one bite rolls-yielding 48 not 24 from a single batch. She also turns the dough into a nice coffee cake by forming the dough into a rectangle and brushing it with melted butter. She then sprinkles it with brown sugar and pecans and rolls it up like a jelly roll. It can then be slashed and formed into a coffee cake shape, or cut into slices and placed in a 9 x 13 pan before baking. My youngest daughter likes to spread the triangles of dough with pesto before rolling up to make a savoury roll that goes well with soup. Give these homemade dinner rolls a try.
